  •  Been busy working, making money . . .

    to go to DISNEYLAND in three days!!

    We will only get to be there for ONE day since Ainsley and I are going as "chaperons" for Monte's track team!    His girls cross country team (12 of them) will be running at a meet at Pepperdine University in Malibu on Saturday . . .  

    so we just HAD to drop by Disneyland on the way there!  It is COOLING OFF!  Supposed to be a high of 71 when we're going to be there on Thursday!  BRRRR!

    I'm excited that Ainsley is now 41 inches, so I think she'll be able to ride some different rides from when we went last October - either way, we're going to have a ball trying to fit all of this into ONE day since we have the pass for CA Adventure too!!

    Since I've been working a little more here lately I've been staying up even later on my days off to get things done in the study - it's now 4:30 am - I went to bed at 5:45 the other morning on my day OFF!  I worked 16 hours on Friday night - came home Saturday morning @ 8:30 and Monte was waking up and in a talkative mood so we talked until 9:15!  To say the least, I didn't have a whole lot of energy when I got up at 2!  Just enough to do some cleaning and make food for our potluck we had at church today.

    I tried making some of lilmansmum's "cake truffles", but MAN!  That was annoying!!  I'll have to ask her for some help on the details.  I did yellow cake with a berry cobbler coffee creamer - it wasn't really too great of a combo . . . but everyone was really nice and said they liked them.  I was glad, since I didn't want to take them home with me!  ha!  I should have taken a picture of them so you could compare them to Jen's!  Mine were BIG and UGLY!  ha!  Oh well, I tried.

    OK - better get to bed, my eyes are blurring and I REALLY need to brush my teeth!  I feel a THIRD layer coming on!  YUCK!

  • When Math was almost five we took the kids to Disneyland.  He was a BIG fan of Indiana Jones and desperately wanted to ride the ride.  They checked his height and the thing just brushed the top of his hair so they wouldn't let him get on.  :cry:   The next day we had him wear different shoes and he was tall enough.  :fun:  That is a great ride!

  • Oh no!  What did you do?  They should not be hard to make at all.  It sounds to me like maybe you made them too big.  They should be small enough to eat in just two bites....or maybe even one.  And did you add some shortening to your melted coating?  That helps with the dipping.  Also, when you dip them in the melted chocolate (or whatever you're using) you can use a fork to lift them back out.  That way the excess coating can drip off, and you don't have to hold it in your hands.  It also sounds like maybe the flavors you picked didn't work out.  That is just trial and error.  You never know how it will taste until you try it.  I know that chocolate cake with peanut butter coating is good....and so is red velvet cake with white coating.  I just use plain ole coffee creamer with those.  Don't give up though.  Try a different flavor next time and see how it goes.  :goodjob:

  • Hope you had a great time at Disneyland!! I found the picture I took at the girls from church in Clovis a few weeks back. I'll post it soon--it's so cute!!

  • One more thing....I was on someone elses site and noticed you talking of moving to MO. SO are you moving soon or just future plans?? Isn't that where Monte is from.

  • RYC: Yah, I didn't get to go, but Lyndsay showed me the book you made her. It's so cool! A bunch of us down here were wondering where you got it done. We all want books like that now. Have fun at Disneyland, even if you are chaperoning.

  • RYC:  That dessert was just a white cake with buttercream frosting and white-dipped strawberries on top,  covered with french vanilla pirouettes around the sides.  I was going to put a strawberry filling, but I didn't have time to make one.  You can use any flavor of cake, filling, frosting, fruit, and pirouettes.  The pirouettes come in lots of flavors like hazelnut, mint, cappucino, etc.  It was yummy!
    I used white almond bark for my white cake truffles, and I used melted chocolate chips for the chocolate dipped ones.  I also added a few teaspoons of shortening to the chocolate chips (that helps it not be so thick).  You can also stick it back in the microwave for a few seconds if it starts to set up too quickly....but you do have to work kind of fast to keep things moving!:goodjob:
    Oh, and thanks for saying I look "tiny"  LOL!
